One Sunday afternoon, while enjoying a meal prepared by Kousika, Amit realized the dish had something exceptional. What started as a casual compliment soon became a serious business thought. By the end of the evening, he had already begun calculating possibilities, understanding customer demand, scalability, and operational feasibility through the lens of a banker.
Within days, the AADIJAY® brand name was officially registered. Shortly after, the couple launched operations through Zomato and Swiggy using their home kitchen. Kousika handled the cooking while Amit managed operations, logistics, and marketing with a small Meta advertising budget. Their menu initially featured only one product — biryani.
The business operated exclusively on Sundays in its early days. On the very first Sunday, AADIJAY® received seven orders. Those seven deliveries became the foundation of a much larger vision. Within two months, the order volume multiplied rapidly, eventually leading to full-scale daily evening operations.
Today, AADIJAY® has expanded to more than 300 outlets across Bharuch, Ahmedabad, Surat, and Vadodara, establishing itself as a major player in Gujarat’s evolving food and hospitality ecosystem. The company has evolved beyond being just a biryani brand into a cloud-kitchen-led hospitality infrastructure business focused on operational efficiency, food consistency, and scalable growth.
Speaking about the journey, Amit B Choudhury says, “A banker spends his career asking others to prove their ideas work. When it was my turn, I had to prove it to myself first. Seven biryanis on a Sunday did that.”
